Working with our Executive Chefs, we mix international inspiration with local favourites, offering menus that feature fresh and organic ingredients.
Chef Colin Smith
With 30 years of culinary experience, Colin is responsible for the menus across our US lounges and integrates tradition, innovation, and creativity into his craft. After attending the California Culinary Academy in San Francisco, he began his career as an apprentice in kitchens of European chefs throughout the Bay Area, working with notable restaurants such as Lipizzaner, Duck Club, Saros, Danville Hotel, and Stars.
