COLIN SMITH 

With more than 30 years of culinary experience – and following in his grandfather’s footsteps - Chef Colin Smith has seen many restaurant kitchens. An attendee of the California Culinary Academy, Colin integrates tradition, innovation and creativity into his craft at the Roundabout Grill in downtown Reno.

DINOSAUR BAR-B-QUE

Committed to tradition, but also with its own individual stamp, Dinosaur Bar-B-Que is a firm favorite in the Syracuse area – and now finds another home in the Escape Lounge® of Syracuse Hancock International Airport.

Brought to life in the early 80s, founder John Stage and two partners cut a 55-gallon drum in half to form a makeshift barbeque and took to the road to share their passion. Since its conception, the restaurant’s menu has been firmly rooted in the traditions of Southern bar-b-que – however, has allowed other influences to shape its flavors and give its food its own distinctive character.

Featuring foods and sauces that are award-winning, must-tries on this menu include the Pulled Pork Slider and the Spicy Bloody Mary.
